I made these the weekend before Halloween so I tried to be a little festive and add a spiderweb cake on the top. The good blogger I am, I forgot to take a photo of the solo web cake.
I've tried many different wheat mixes but the truth is I just couldn't find anything that tastes like my long time cakes until I found the Log Cabin All Natural Pancake Mix. With only 5 natural ingredients it fits right into my cleaner way of eating and it tastes DELISH!! The family had no idea I even switched mixes.

Ingredients: I simply followed the ingredients from the box and made a few adjustment to allow for me to add some protein to this batch.

Directions: Blend dry ingredients in medium or large bowl. Add the milk, eggs, oil and cinnamon. Blend well until all ingredients are mixed together. Spray pan or griddle to avoid cakes sticking to pan. Use a 1/3 measuring cup to scoop mixture onto heated pan or griddle. For topping: I no longer use syrups for my toppings. I heat frozen fruits and I will never go back to using syrup again. I used the berry mix from Aldi's. Place 1/2 - 1 cup of frozen fruits in small bowl. add 1/2 tbs water (to create more fruit liquid). Heat in microwave for 45 secs. Check fruit. Add additional 10 seconds until fruit is no longer frozen and warm. Spoon fruits and juices on top of cakes. ENJOY! |
